Hope you're enjoying this cool weather! I've posted the recipe below from pg. 158 of the Cooking with All Things Trader Joe's cookbook. Hope you love it!
3 Cups Cooked Chicken
2 Tbsp Butter
2 Tbsp Flour
1 1/2 Cups Milk
1 tsp Chicken Bouillon
1 (16 oz) Package Vegetable Melange or other vegetable mix (about 3 cups)
1 box frozen ready-made pie crust (2 crusts)
Salt & Pepper to taste
Preheat oven to 350F. Defrost pie crusts according to package instructions
Melt butter in a medium pot over medium-high heat. Add flour and cook for 2 minutes stirring frequently. Add milk and broth. Simmer 5 minutes or until sauce is thickened and coats the back of a spoon.
Stir in chicken and vegetables, coating all pieces evenly. Season with salt and pepper to taste.
Line 9-inch pie pan with 1 crust. Pour chicken mixture into lined pan. Top with 2nd crust and crimp edges to seal.
Place pie on baking sheet to catch drippings. Bake for 45+ min or until top is golden brown.
